Spread them on a baking sheet and roast in the oven for 10-15 minutes, or until golden and tender. While the mushrooms are roasting, toast the pine nuts in a dry skillet over medium heat. Stir frequently and remove them from the heat once golden brown. Be careful as they can burn quickly. For the spicy tahini dressing, in a small bowl, combine the tahini, lemon juice, water, chillis, minced garlic, and salt. Whisk until smooth. If the dressing is too thick, you can add a little more water to thin it out. In a large bowl, combine the roasted mushrooms, toasted pine nuts, and arugula. Drizzle the spicy tahini dressing over the salad and toss gently to combine.Serve immediately as a stand-alone dish or as a refreshing side salad.
