The Top Taste Tournament takes place on Sunday, June 12th.
The “doors” open at 11:00 am, and competitors can begin serving immediately.
A participating customer will receive 1 marble and 4 tickets from the CAC/Studio 2880 table. This costs $10. Four tickets are the limit, and customers cannot purchase more.
Each competitor will offer one “dish” for each ticket, limited to one per customer.
To vote, a customer places their voting marble into one of the labeled buckets located at the CAC/Studio 2880 Table.
At 2:00 pm, tickets will no longer be sold, and customers have until 2:30 pm to drop their marble in their preferred bucket.
Bacon will be provided by Birch & Boar ahead of the event. Dishes can be prepared before Sunday, and competitors will be asked to prepare 100 portions. Each dish is not required to be more than one or two bites (a canapé).
Tickets and plates will be provided on the day of the event.
After the event, all revenue earned from sales will be split among the competing vehicles.
The winner will be announced at 3:00 pm Sunday, and the trophy will be awarded.
Bacon is Tenish Farm pork belly, naturally cured with local honey, spruce tips foraged by Birch and Boar, and lightly spiced with peppercorn, star anise, and cinnamon. They have been hung for 7 days and smoked over birch and apple wood. The bacon is in a slab, and every contestant receives 5kgs, giving them 50g per canape. If more bacon is required, more can be provided as needed.
